Last month a very exciting package arrived on my doorstep containing this box of joy, I love making cakes and I especially enjoying cheating at it. I was really excited to try out this Party Rainbow Chip mix by Betty Crocker as it’s not readily available in the UK. It is available on Cyber Candy though, along with lots of other Betty Crocker products, including some amazing looking lip balms! When I was little I used to bake cakes using these cake mix kits all the time with my Nan, normally those Tom & Jerry ones with the strawberry icing though, I used to call them ‘making cakes’. This ‘making cake’ is a bit more special than those though, it’s vanilla flavoured with little rainbow coloured bits in it. I also bought some of the Betty Crocker Vanilla Icing to frost the top and put in the middle along with some pretty sprinkles and ribbon for a bit of ‘jeushing’ up. Wanna see how I made it?
You will need:
The Cake Mix | 3 Eggs | 250ml Water | 125ml Oil
How to make it:
Preheat your oven to 350 Degrees F or Gas Mark 3/4
Grease the bottom of two cake tins
Mix together the cake mix, oil, water and eggs together.
Start off on a low speed for 30 seconds then on to a medium speed for around 2 minutes
Give the bowl a stir and pour the mixture into your cake tins
Pop your cake tins into your oven and bake them for 28-35 minutes
Mine took 35 minutes to be perfectly baked
Place your cakes on a cooling rack for around 10 minutes or until cool
Spread some of the icing on top of one of the cakes and sandwich them together
Then decorate as you desire, I spread some more of the icing around the whole of the cake – this didn’t look too good so I covered it in sprinkles and ribbon!
Cut a piece and enjoy!
I was really impressed by this cake mix kit, it was really easy to follow the instructions and I can never make cakes rise as well as these did! I really enjoyed the decorating aspect too, even though I did get filthy and covered in icing. The cake tastes amazing too, really, really sweet and indulgent. I’m not a fan of sweet things myself but even I ate 2 slices of it. I would definitely buy one of these cake mixes again for a special occasion, I’m thinking my birthday in November deserves a lot of sugar.
